Thai Chicken Burger

Steps

Patties:

  1. Preheat the oven to 180C fan with cast iron pan inside.
  2. Add all the ingredients for the chicken patties to a bowl and mix.
  3. Form into 3 burger patties with your hands.
  4. Transfer the cast iron to the hob and heat over high heat (10 or 11).
  5. Once up to temperature, add 1 tbsp peanut oil and wait for it to heat up.
  6. Place the burger patties in the pan and cook 2-3 mins per side (until golden brown).
  7. Transfer to a small aluminium tray and place in the oven for 10 minutes until internal temperature is 73C.

Slaw:

  1. Whisk together the peanut butter, lime juice, sugar, white vinegar, soy sauce, sriracha, and water.
  2. Add the cabbage and carrots and mix.

Burgers:

  1. Toast the buns lightly until golden brown.
  2. Add patty.
  3. Top with slaw.
  4. Enjoy!
