Chicken Quesadillas

Ingredients
Chicken Mixture
- 300 grams Chicken Breasts
- 1 tablespoon Olive Oil
- 1 teaspoon Paprika (sweet)
- 1⁄4 teaspoons Cumin (heaped)
- 1⁄2 teaspoons Garlic Powder
- 1⁄2 teaspoons Onion Powder
- Salt
- Black Pepper
Filling
- 1 Onion
- 1 Red Pepper
- 12 grams Plain Flour
- 180 millilitres Chicken Stock
- 1 tablespoon Tomato Puree
Filling Spices
- 2 teaspoons Paprika (sweet)
- 1 teaspoon Garlic Powder
- 1⁄2 teaspoons Cumin
- 1⁄2 teaspoons Onion Powder
- 1⁄2 teaspoons Chilli Flakes
Quesadillas
- 4 Flour Tortillas
- Grated Cheese (cheddar)
Steps
Cook the Chicken:
- Preheat oven to 180C(fan).
- In an oven-safe dish, combine all the chicken ingredients, fully incorporating everything.
- Bake for 24 minutes.
- Once the chicken has cooled, shred it or cut into pieces, but don't turn off the oven.
Cook the Filling:
Proceed after the chicken has cooked.
- Heat oil in a pan over a high heat, add onion and pepper, and fry for 3-4 minutes.
- Meanwhile, add the flour to the stock and whisk it together.
- Slowly whisk in stock and cook for 1-2 minutes until thickened, stirring frequently.
- Add the "Filling Spices" and tomato puree, mix well and cook for 1-2 minutes, or until the stock has reduced to your liking.
- Add cooked chicken and mix well.
Assemble and Bake:
- Add mixture onto a tortilla and top with cheese. Fold it in half.
- Bake for about 8-10 minutes.
