Steps

Cook the Chicken:

  1. Preheat oven to 180C(fan).
  2. In an oven-safe dish, combine all the chicken ingredients, fully incorporating everything.
  3. Bake for 24 minutes.
  4. Once the chicken has cooled, shred it or cut into pieces, but don't turn off the oven.

Cook the Filling:

Proceed after the chicken has cooked.

  1. Heat oil in a pan over a high heat, add onion and pepper, and fry for 3-4 minutes.
  2. Meanwhile, add the flour to the stock and whisk it together.
  3. Slowly whisk in stock and cook for 1-2 minutes until thickened, stirring frequently.
  4.  Add the "Filling Spices" and tomato puree, mix well and cook for 1-2 minutes, or until the stock has reduced to your liking.
  5. Add cooked chicken and mix well.

Assemble and Bake:

  1. Add mixture onto a tortilla and top with cheese. Fold it in half.
  2. Bake for about 8-10 minutes.
