Ingredients
- 2 Tomatoes (cored and quartered)
- 0.5 Red Onion (quartered)
- 2 cloves Garlic
- 2 Jalapeño
- 6 sprigs Coriander
- 24 millilitres Lime Juice (1 lime)
- 1 teaspoon Sugar
- 11⁄2 teaspoon Cumin
- 1⁄2 teaspoons Salt (heaped, so it's more like 0.75)
- 120 grams Crushed Tomatoes
- 40 grams Canned Green Chillies
Steps
- Place all ingredients except crushed tomatoes and chillies in a food processor. Puree until the contents are fine and well blended.
- Pour in the crushed tomatoes and green chiles. Pulse until mostly smooth. Taste, then add more cumin and sugar if desired. Refrigerate until ready to serve.
Tastes best if made the day before!
