Ingredients
Shepherd’s Pie Filling
- 1 tablespoon Olive Oil
- 340 grams Beef Mince (or 145g lentils)
- 1 Onion (diced)
- 3 cloves Garlic
- 1.5 Carrot (large ones)
- 2 Celery (diced)
- 2 tablespoons Worcestershire Sauce
- 11⁄2 teaspoon English Mustard
- 1 tablespoon Tomato Puree
- 1 teaspoon Mixed Herbs (heaped)
- Sprinkle Rosemary
- 1⁄2 teaspoons Salt
- 1 teaspoon Black Pepper
- 1 tablespoon Plain Flour
- 100 millilitres Red Wine (stock pot + 100ml water)
- 250 millilitres Beef Stock
- 1 Bay Leaf
- Peas (Frozen)
Mashed Potato Topping
- 2 Potatoes (large ones for baking)
- 21 grams Butter
- 60 millilitres Milk
- Salt
- Black Pepper
- 3 cloves Garlic
- Cheddar Cheese
- Parmesan Cheese
- Rosemary
Steps
- Heat olive oil in a Dutch oven over medium-high heat.
- Add the ground beef and cook until browned, breaking it up with a wooden spoon as you go.
- Once cooked, remove meat and set aside. Reduce heat to medium.
- Add the onions and garlic and cook for about 3-5 minutes until beginning to soften.
- Add the diced carrot and celery and cook for another 10 minutes.
- Stir in the tomato paste and cook for 1 minute.
- Add the Worcestershire sauce, mustard, mixed herbs, rosemary, salt, and pepper. Cook for a few minutes.
- Add in the flour until fully incorporated.
- Add the red wine to deglaze.
- Then reduce the heat to medium-low, and add in the cooked beef, beef stock, peas, and a bay leaf. Stir to combine.
- If using lentils, add them in now and expect to simmer for 25-30 mins.
- Let it simmer until it thickens. Once thickened, taste for seasoning.
- Preheat the oven to 175 C, and then make the mashed potato topping.
- Add potatoes to a large pot and cover with water. Bring to a boil, and boil until potatoes are fork tender, about 12-13 minutes.
- Drain potatoes and return to the pot.
- Add the butter and mash potatoes until smooth. Add garlic, cheddar cheese, salt, pepper, and rosemary to taste.
- Transfer the beef filling to an oven safe dish and top with the mashed potatoes, smoothing into an even topping layer. Use a fork to rough up the top a bit.
- Bake, uncovered for about 35 minutes. To create a slightly browned, slightly crisp top, turn on the broiler at the end of the 35 minutes and broil for about 5 minutes. Watch the oven to make sure the top doesn't burn.
- Sprinkle with parsley.
