Steps

  1. Heat olive oil in a Dutch oven over medium-high heat.
  2. Add the ground beef and cook until browned, breaking it up with a wooden spoon as you go.
  3. Once cooked, remove meat and set aside. Reduce heat to medium.
  4. Add the onions and garlic and cook for about 3-5 minutes until beginning to soften.
  5. Add the diced carrot and celery and cook for another 10 minutes.
  6. Stir in the tomato paste and cook for 1 minute.
  7. Add the Worcestershire sauce, mustard, mixed herbs, rosemary, salt, and pepper. Cook for a few minutes.
  8. Add in the flour until fully incorporated.
  9. Add the red wine to deglaze.
  10. Then reduce the heat to medium-low, and add in the cooked beef, beef stock, peas, and a bay leaf. Stir to combine.
    1. If using lentils, add them in now and expect to simmer for 25-30 mins.
  11. Let it simmer until it thickens. Once thickened, taste for seasoning.
  12. Preheat the oven to 175 C, and then make the mashed potato topping.
  13. Add potatoes to a large pot and cover with water. Bring to a boil, and boil until potatoes are fork tender, about 12-13 minutes.
  14. Drain potatoes and return to the pot.
  15. Add the butter and mash potatoes until smooth. Add garlic, cheddar cheese, salt, pepper, and rosemary to taste. 
  16. Transfer the beef filling to an oven safe dish and top with the mashed potatoes, smoothing into an even topping layer. Use a fork to rough up the top a bit.
  17. Bake, uncovered for about 35 minutes. To create a slightly browned, slightly crisp top, turn on the broiler at the end of the 35 minutes and broil for about 5 minutes. Watch the oven to make sure the top doesn't burn. 
  18. Sprinkle with parsley.
