Prosciutto and Burrata Sandwich

Ingredients
- 2 Bread Slice (toasted)
- 0.5 Red Pepper
- 2 teaspoons Pesto
- 0.5 Burrata
- Rocket
- Prosciutto (crispy)
- Drizzle Balsamic Vinegar
Steps
- Preheat the oven to 200C fan.
- Cut the red pepper into pieces, place on a baking sheet skin-side up, and roast for 25-30 minutes until charred.
- Once the pepper is done, place in a bowl, cover with foil, and let cool. Once fully cooled, remove the skins.
- Turn the oven down to 180C and roast the prosciutto until crispy.
- Spread butter on one side of each slice of bread. Then toast in a cast iron pan butter side down until nice and golden.
- Once everything is ready, place the bread slices toast side down on a plate.
- Spread the pesto onto one slice, fully covering the bread.
- Place the burrata on top of the pesto.
- Add the roasted red pepper.
- Add the prosciutto.
- Add a handful of rocket.
- Season with salt and pepper if desired.
- Drizzle with a bit of balsamic.
- Place the second slice of toasted bread on top of the sandwich, toasted side facing up.
- Serve immediately.
