Prosciutto and Burrata Sandwich

Steps

  1. Preheat the oven to 200C fan.
  2. Cut the red pepper into pieces, place on a baking sheet skin-side up, and roast for 25-30 minutes until charred.
  3. Once the pepper is done, place in a bowl, cover with foil, and let cool. Once fully cooled, remove the skins.
  4. Turn the oven down to 180C and roast the prosciutto until crispy.
  5. Spread butter on one side of each slice of bread. Then toast in a cast iron pan butter side down until nice and golden.
  6. Once everything is ready, place the bread slices toast side down on a plate.
  7. Spread the pesto onto one slice, fully covering the bread.
  8. Place the burrata on top of the pesto.
  9. Add the roasted red pepper.
  10. Add the prosciutto.
  11. Add a handful of rocket.
  12. Season with salt and pepper if desired.
  13. Drizzle with a bit of balsamic.
  14. Place the second slice of toasted bread on top of the sandwich, toasted side facing up.
  15. Serve immediately.
