Sausage & Gravy Traybake

Ingredients
- 375 grams Baby Potatoes (about 5)
- 1 Carrot (peeled and cut into 2cm pieces)
- 1 Red Onion (cut into large-ish chunks)
- 4 cloves Garlic
- 1 tablespoon Olive Oil
- 1 teaspoon Dried Thyme
- 4 Sausages (onion-flavoured!)
- 20 grams Butter (melted)
- 2 tablespoons Cornflour
- 350 millilitres Beef Stock
Steps
- Preheat the oven to 180C fan.
- Add onions, potatoes, carrots, and garlic to a large baking dish, and drizzle over the olive oil.
- Season with salt and pepper and mix until incorporated.
- Top with sausages, and coat with a small layer of oil.
- In a jug mix together the beef stock, cornflour, dried thyme, and melted butter, then pour over the sausages and veg.
- Cook in the oven for 1 hour, turning the sausages halfway through.
- Check sausages are 160 degrees F.
