  1. Preheat the oven to 180C fan.
  2. Add onions, potatoes, carrots, and garlic to a large baking dish, and drizzle over the olive oil.
  3. Season with salt and pepper and mix until incorporated.
  4. Top with sausages, and coat with a small layer of oil.
  5. In a jug mix together the beef stock, cornflour, dried thyme, and melted butter, then pour over the sausages and veg.
  6. Cook in the oven for 1 hour, turning the sausages halfway through.
  7. Check sausages are 160 degrees F.
