Roasted Cauliflower Cheddar Soup

Steps

  1. Preheat the oven to 180C fan.
  2. Place the cauliflower, onion, and head of garlic on a baking sheet. Drizzle with olive oil and season with salt and pepper.
  3. Roast in the oven for 25 minutes.
  4. Then cover with kitchen foil and roast for an additional 10 minutes.
  5. Meanwhile, prepare the stock.
  6. Once the vegetables are done, place the following ingredients into a blender and process until smooth:
    1. Half the stock
    2. All the vegetables and garlic
    3. The cheddar cheese
  7. Transfer the blended soup into a pan on medium heat. Add the single cream and stir until combined.
  8. Add additional stock if desired, along with extra salt and pepper.
  9. Garnish with chopped chives, extra cheddar, and a pinch of paprika.
