Roasted Cauliflower Cheddar Soup

Ingredients
Soup
- 1 head Cauliflower (cut into florets)
- 1 Red Onion (peeled and quartered)
- 1 head Garlic (cut the top off)
- 3 tablespoons Olive Oil
- Salt
- Black Pepper
- 400 millilitres Chicken Stock
- 110 grams Cheddar Cheese
- 125 millilitres Single Cream
Serving
- Chives (fresh, chopped)
- Pinch Paprika
Steps
- Preheat the oven to 180C fan.
- Place the cauliflower, onion, and head of garlic on a baking sheet. Drizzle with olive oil and season with salt and pepper.
- Roast in the oven for 25 minutes.
- Then cover with kitchen foil and roast for an additional 10 minutes.
- Meanwhile, prepare the stock.
- Once the vegetables are done, place the following ingredients into a blender and process until smooth:
- Half the stock
- All the vegetables and garlic
- The cheddar cheese
- Transfer the blended soup into a pan on medium heat. Add the single cream and stir until combined.
- Add additional stock if desired, along with extra salt and pepper.
- Garnish with chopped chives, extra cheddar, and a pinch of paprika.
