Onion and Cheese Sandwich

Ingredients
- 2 tablespoons Olive Oil
- 3⁄4 teaspoons Cumin
- 5 Curry Leaves
- 3 Shallot (thinly sliced)
- 1⁄2 teaspoons Chaat Masala
- 100 grams Cheddar Cheese
- 2 Bread Slice (sourdough)
- Handful Coriander (fresh)
- 2 Chillies (green)
Chutney
- Handful Coriander (fresh)
- 1 Chillies (green)
- Pinch Salt
- Pinch Sugar
- 0.5 Lemon (juice only)
- Splash Water
Steps
- Slice the shallots.
- Heat a pan full of oil, and once hot, add the cumin, curry leaves, green chillies, and shallots. Cook for 5 minutes until soft.
- Turn off the heat, and add some chopped coriander, salt, and chaat masala. Put aside to cool.
- Grate the cheddar cheese, and add to the onion mixture.
- Then make the chutney: add all ingredients to a blender or food processor and puree until smooth.
- Spread chutney over the bread, and add the onion mixture on top.
- Cook in the pan until golden.
