Ingredients
Pesto
- 50 grams Fresh Basil Leaves
- 2 cloves Garlic
- 25 grams Pine Nuts
- 30 grams Parmesan Cheese
- 50 millilitres Olive Oil
- Salt
- Black Pepper
Pasta
- 175 grams Fresh Pasta
- 100 grams Mozzarella (pearls)
- 25 grams Rocket
Steps
- Cook the pasta in salted boiling water as per the packet instructions.
- Drain it, then run it under cold water until cool.
- To make the basil pesto, add all ingredients into a food processor and blitz until smooth. Taste for seasoning, add salt and pepper as needed.
- Combine and serve.
