Honey Paprika Chicken Flatbreads

Ingredients
Chicken Mixture
- 300 grams Chicken Breasts
- 0.5 Lemon (juiced)
- 1 tablespoon Olive Oil
- 1 teaspoon Paprika
- 1⁄4 teaspoons Cumin (heaped)
- 1⁄2 teaspoons Garlic Powder
- 1⁄2 teaspoons Onion Powder
- Salt (to taste)
- Black Pepper (to taste)
Flatbreads
- 1 Onion (finely sliced)
- 1 Red Pepper (finely sliced)
- 1 tablespoon Tomato Puree
- 25 grams Hot Honey
- 1 tablespoon Balsamic Vinegar
- 80 millilitres Water
- 80 grams Mozzarella (grated)
- 4 Flatbreads
- 1 tablespoon Olive Oil
- 2 teaspoons Paprika
- 2 teaspoons Parsley (dried)
- 1 teaspoon Garlic Powder
- 1⁄2 teaspoons Cumin
- 1⁄2 teaspoons Onion Powder
- 1⁄2 teaspoons Chilli Flakes
- Salt (to taste)
- Black Pepper (to taste)
Honey Mustard Sauce
- 25 grams English Mustard
- 170 grams Mayonnaise
- 40 grams Hot Honey
- 1⁄4 teaspoons Paprika (wing it)
- 1⁄4 teaspoons Parsley (dried; wing it)
Steps
Cook the Chicken:
- Preheat oven to 180C(fan).
- In an oven-safe dish, combine all the chicken ingredients, fully incorporating everything.
- Bake for 25 minutes.
- Once the chicken has cooled, cut into pieces.
Cook the Toppings:
Proceed after the chicken has cooked.
- Heat oil in a pan over a high heat, add onion and pepper, and fry for 3-4 minutes.
- Add the tomato puree and plain water, mix well and cook for 1-2 minutes.
- Add all seasonings, balsamic vinegar, honey, stir in.
- Add cooked chicken and mix well.
Bake:
- In a small bowl combine honey, mayonnaise, English mustard, smoked paprika and dried parsley. This is the honey mustard sauce.
- Place the flatbreads on a roasting tray. Add a generous layer of honey mustard sauce, followed by the chicken mixture and grated cheese. Sprinkle some chilli flakes and dried parsley.
- Bake on 180C(fan) for 10-11 minutes.
