Ingredients
- 192 grams Almond Flour
- 135 grams Oats
- 2 teaspoons Cinnamon
- 1 teaspoon Baking Soda
- 1⁄2 teaspoons Salt
- 60 grams Walnuts
- 3 Egg
- 1 Apple (grated)
- 2 Carrot (peeled & grated)
- 85 grams Butter (melted)
- 170 grams Honey
- 1 teaspoon Vanilla Extract
Steps
- Preheat the oven to 350 degrees F.
- Prep a 12-count muffin pan with liners.
- In a large bowl, combine the almond flour, oats, cinnamon, baking soda, salt, and walnuts.
- In a separate bowl, whisk the eggs, honey, melted butter, and vanilla extract.
- Add the apple and carrot.
- Add the liquid ingredients to the dry, mixing until just combined.
- Spoon the batter into the muffin cups, filling to the brim.
- Bake for 25-30 minutes.
