Steps

  1. Preheat the oven to 325F (160C). Line a large baking sheet with parchment paper.
  2. Mix the flaxseed meal and chia seeds in a bowl.
  3. Add the water and let sit for 10–15 minutes so the seeds absorb the water and form a gel-like consistency.
  4. Stir in the poppy seeds, sesame seeds, spices, and salt to taste.
  5. Spread the mixture on the previously prepared parchment-lined baking sheet. Place another piece of parchment paper on top and use your hands to spread the mixture evenly, about 1/4-inch thick. Make sure it’s evenly spread and not too thick in the middle (to ensure the crackers cook evenly).
  6. Cut into squares.
  7. Bake for 30–35 minutes, then check for doneness. The edges should be crisp and dry. If the center is still soft, flip the whole sheet over and bake for another 10–15 minutes.
  8. Cool completely, then break or cut into pieces.
