Cauliflower Tikka Masala

  1. Preheat the oven to 180C.
  2. Cut cauliflower into florets.
  3. Place the cauliflower on a baking tray flat-side down and roast on the middle shelf for 20 minutes.
  4. After 20 minutes, check if the cauliflower is done (especially on the bottoms!). If not, put back in for another ~5 minutes.
  5. Meanwhile (as soon as the cauliflower goes in the oven), heat up the sauce and chickpeas (with their stock) on medium. Once simmering, turn it down to low.
