White Bean Salad

Ingredients
Salad
- 1 tin (400g) Cannellini Beans
- 0.5 Cucumber
- 1 Red Pepper
- 1 Carrot (grated)
- 2 Spring Onion
- 4 Dates
- 30 grams Feta Cheese
- 20 grams Sunflower Seeds
Dressing
- 30 millilitres Olive Oil
- 0.5 Lemon Juice
- 1 tablespoon Dijon Mustard
- 1 clove Garlic (grated)
- 15 millilitres Balsamic Vinegar
Seasonings
- 1⁄2 teaspoons Salt
- Black Pepper
Steps
- Chop all vegetables and add to a large bowl with the beans.
- Into a small jug, combine dressing ingredients.
- Pour dressing ingredients over the vegetables and toss to combine.
- Add in the seasonings and mix well.
