Steps

  1. Mix all the ingredients EXCEPT chicken stock together in a bowl until fully combined.
  2. Add oil to a medium saucepan over medium high heat.
  3. Add the chicken only to the pan and cook for 2 minutes on each side.
  4. Then add all the remaining ingredients. Bring to a boil, cover, then let simmer for 15 minutes.
    1. If it feels like it needs some stock at this point, add it.
  5. Once the chicken is fully cooked, remove it from the pan, shred it, then re-add it to the pan.
  6. Continue to cook -- uncovered -- for another 5 to 10 minutes. (Note: You may need to add a bit of stock if the mixture is cooked too high and gets too thick.)
  7. Remove everything from the pan.
  8. Divide the mixture between tortillas. Top with cheese. Serve!
