Chicken Fajitas

Ingredients
Chicken Mixture
- 2 Chicken Breasts
- 1 Red Onion
- 1 Green Pepper
- 113 grams Chopped Tomatoes
- 1⁄4 cups Salsa
- 2 tablespoons Taco Seasoning
- 1 teaspoon Cumin
- 2 cloves Garlic
- 1 teaspoon Chilli Powder
- Chicken Stock (as needed (less than 150ml))
Fajitas
- Cheddar Cheese
- Flour Tortillas
Steps
- Mix all the ingredients EXCEPT chicken stock together in a bowl until fully combined.
- Add oil to a medium saucepan over medium high heat.
- Add the chicken only to the pan and cook for 2 minutes on each side.
- Then add all the remaining ingredients. Bring to a boil, cover, then let simmer for 15 minutes.
- If it feels like it needs some stock at this point, add it.
- Once the chicken is fully cooked, remove it from the pan, shred it, then re-add it to the pan.
- Continue to cook -- uncovered -- for another 5 to 10 minutes. (Note: You may need to add a bit of stock if the mixture is cooked too high and gets too thick.)
- Remove everything from the pan.
- Divide the mixture between tortillas. Top with cheese. Serve!
