Warm Spinach & Date Salad

Ingredients
- 1 Red Onion (sliced)
- 80 grams Spinach
- 2 Dates
- 2 tablespoons Olive Oil
- Salt
- Black Pepper
- 15 grams Sunflower Seeds
- 20 grams Feta Cheese
Steps
- Preheat oven to 180C fan.
- Add sliced red onion with olive oil, salt, and pepper.
- Roast for ~20 minutes until soft.
- Remove from oven and add spinach. Cover with a large baking sheet to help the spinach wilt.
- Add dates and sunflower seeds or other nuts.
