  1. Preheat oven to 180C fan.
  2. Add sliced red onion with olive oil, salt, and pepper.
  3. Roast for ~20 minutes until soft.
  4. Remove from oven and add spinach. Cover with a large baking sheet to help the spinach wilt.
  5. Add dates and sunflower seeds or other nuts.
