Whole Wheat Sourdough Dinner Rolls

After 1.5 hours of resting after stretch and folds, I fridged the dough.

Took it out at 2:30 to shape and cover.

Steps

Night before:

  1. The night before, feed sourdough starter.
  2. Cut the butter into ½-inch thick pats. Place the pats on a plate on the counter to warm to room temperature.

Day 1: Making the Dough (18 mins):

  1. Into a straight-sided vessel, add the sourdough starter and water. Mix until incorporated.
  2. Then add the flour and honey. Mix the ingredients for around 30 seconds until they are just combined into a shaggy dough. 
  3. Let sit for 10 minutes.
  4. Now add the salt and oil. Then one bit at a time, add butter. Mix for about a minute until combined.
  5. Let sit for 30 minutes.

Day 1: Stretch and Fold (2 hours):

  1. After 30 minutes, grab a corner of the dough and pull it up and into the center.
  2. Repeat until you’ve performed this series of folds 4 to 5 times with the dough.
  3. Let dough rest for 1 hour and repeat the stretching and folding action.
  4. Repeat for a total of 3 sets of stretch and folds, over 3 hours.

Day 1: Bulk Fermentation (1-2 hours):

  1. Cover the bowl with a towel and let rise at room temperature for 1-2 hours.

Day 1: Prepare & Shape (10 mins):

  1. Oil a cast iron casserole pan, then liberally dust with semolina flour and set aside.
  2. Gently scrape the dough onto the work surface (no need to flour it) and use your bench knife to divide it into 12 pieces roughly 80 grams each.
  3. Shape each piece into a taut ball and place it on the sheet pan; you should be able to comfortably fit all 12 pieces with space in between.
  4. Cover with cling film and let rise for 3-4 hours.

Baking:

  1. Preheat your oven to 160C fan.
  2. Bake muffins for 30 minutes.
