Whole Wheat Sourdough Dinner Rolls

Ingredients
- 100 grams Sourdough Starter (active)
- 300 grams Water
- 500 grams Wholemeal Bread Flour
- 30 grams Honey
- 15 grams Salt
- 40 grams Olive Oil
- 25 grams Butter (room temp)
Notes
After 1.5 hours of resting after stretch and folds, I fridged the dough.
Took it out at 2:30 to shape and cover.
Steps
Night before:
- The night before, feed sourdough starter.
- Cut the butter into ½-inch thick pats. Place the pats on a plate on the counter to warm to room temperature.
Day 1: Making the Dough (18 mins):
- Into a straight-sided vessel, add the sourdough starter and water. Mix until incorporated.
- Then add the flour and honey. Mix the ingredients for around 30 seconds until they are just combined into a shaggy dough.
- Let sit for 10 minutes.
- Now add the salt and oil. Then one bit at a time, add butter. Mix for about a minute until combined.
- Let sit for 30 minutes.
Day 1: Stretch and Fold (2 hours):
- After 30 minutes, grab a corner of the dough and pull it up and into the center.
- Repeat until you’ve performed this series of folds 4 to 5 times with the dough.
- Let dough rest for 1 hour and repeat the stretching and folding action.
- Repeat for a total of 3 sets of stretch and folds, over 3 hours.

Day 1: Bulk Fermentation (1-2 hours):
- Cover the bowl with a towel and let rise at room temperature for 1-2 hours.
Day 1: Prepare & Shape (10 mins):
- Oil a cast iron casserole pan, then liberally dust with semolina flour and set aside.
- Gently scrape the dough onto the work surface (no need to flour it) and use your bench knife to divide it into 12 pieces roughly 80 grams each.
- Shape each piece into a taut ball and place it on the sheet pan; you should be able to comfortably fit all 12 pieces with space in between.
- Cover with cling film and let rise for 3-4 hours.
Baking:
- Preheat your oven to 160C fan.
- Bake muffins for 30 minutes.
