Ingredients
Vegetables
- 2 Spring Onion (or red onion)
- 0.25 Cucumber
- 0.25 Red Pepper
- 40 grams Mixed Greens
- Feta Cheese
- 5 grams Sunflower Seeds
- 3 Dates
- 0.5 Avocado
Dressing
- 15 millilitres Olive Oil
- 20 millilitres Lemon Juice
- 1 teaspoon Dijon Mustard
- 1 clove Garlic
- Splash Balsamic Vinegar
Seasonings
- 1⁄2 teaspoons Salt
- Black Pepper

Steps
- Chop all vegetables and add to a large bowl. Omit the leaves at this time.
- Into a small jug, combine dressing ingredients.
- Pour dressing ingredients over the vegetables and toss to combine.
- Add in the seasonings and mix well.
- Add the mixed greens on top and then mix to combine.
