Protein Pancakes

Ingredients
- 75 grams Four-Grain Muesli Base (or oats)
- 95 grams Plain Yogurt (or applesauce or mix)
- 3 Egg (large)
- 30 millilitres Milk
- 2 teaspoons Baking Powder
- Pinch Cinnamon
- 2 tablespoons Whey Protein Powder (vanilla or unflavoured)
Notes
1 serving = 3 pancakes
I had to add A LOT More dry stuff. Like 25g muesli, 1 tbsp more of protein powder (unflavoured), and 1-2 tbsp plain flour.
These aren't bad. Fine if I'm in the mood for them. Sourdough ones are better for general pancakes.
Steps
- Start heating a cast iron pan over medium heat (6 or 7).
- Blitz the muesli in a blender until it resembles a coarse flour.
- Add all remaining ingredients and blend until smooth.
- Add some butter to the cast iron pan and swirl it around.
- Pour 1/3 cup batter into the pan and let cook for ~2 minutes until the edges begin to puff up and bubbles/holes appear on the surface that do not disappear. Then flip.
- Repeat with remaining pancakes.
- Serve with jam or butter.
