Protein Pancakes

1 serving = 3 pancakes

I had to add A LOT More dry stuff.  Like 25g muesli, 1 tbsp more of protein powder (unflavoured), and 1-2 tbsp plain flour.

These aren't bad. Fine if I'm in the mood for them. Sourdough ones are better for general pancakes.

Steps

  1. Start heating a cast iron pan over medium heat (6 or 7).
  2. Blitz the muesli in a blender until it resembles a coarse flour.
  3. Add all remaining ingredients and blend until smooth.
  4. Add some butter to the cast iron pan and swirl it around.
  5. Pour 1/3 cup batter into the pan and let cook for ~2 minutes until the edges begin to puff up and bubbles/holes appear on the surface that do not disappear. Then flip.
  6. Repeat with remaining pancakes.
  7. Serve with jam or butter.
