Butter Swim Biscuits

Ingredients
- 26 grams Butter
- 68 grams Plain Flour
- 1 teaspoon Baking Powder
- 1 teaspoon Sugar
- 1⁄2 teaspoons Salt
- 97 millilitres Buttermilk (room temp)

Steps
- Preheat oven to 200°C conventional with a 6.5" cast iron inside.
- Mix dry ingredients: Whisk together the flour, baking powder, sugar, and salt in a bowl.
- Pour in the buttermilk and mix until a large dough ball has formed.
- Remove the skillet from the oven and add the butter. It should immediately melt. Swirl it around.
- Transfer dough to the pan (right on top of the melted butter) and spread to the edges. Pre-cut the biscuits as desired to fit the pan.
- Bake in the oven for 18 minutes until golden brown on top.
- Let rest 5 minutes before serving.
