Greek Chicken Traybake

Ingredients
Dressing
- 15 millilitres Olive Oil
- 0.5 Lemon (juice & zest)
- 2 cloves Garlic
- 13 grams Dijon Mustard
- 1 teaspoon Paprika
- 1 teaspoon Dried Oregano
- Salt
- Black Pepper
Roast
- 300 grams Baby Potatoes (halved)
- 1 Onion (large-ish chunks)
- 150 millilitres Chicken Stock
- 1 Chicken Breasts
Notes
Serve with broccoli.
Steps
- Preheat the oven to 200C fan.
- Mix together all the dressing ingredients.
- Add the potatoes and onion into a 20x30cm roasting tin (larger grey one) and pour over the dressing. Mix.
- Add in the chicken stock.
- Cover with foil and roast in the oven for 40 minutes.
- Reduce the heat to 180C fan.
- Then add in the chicken and bake uncovered for 20 minutes or until the chicken is fully cooked.
