Steps

  1. Preheat the oven to 200C fan.
  2. Mix together all the dressing ingredients.
  3. Add the potatoes and onion into a 20x30cm roasting tin (larger grey one) and pour over the dressing. Mix.
  4. Add in the chicken stock.
  5. Cover with foil and roast in the oven for 40 minutes.
  6. Reduce the heat to 180C fan.
  7. Then add in the chicken and bake uncovered for 20 minutes or until the chicken is fully cooked.
