Roasted Vegetable Pasta Sauce

Ingredients
Sauce
- 1 Butternut Squash (halved)
- 2 Red Pepper (large chunks)
- 3 Carrot (large chunks)
- 2 Onion (quartered)
- 400 grams Cherry Tomatoes
- 1 head Garlic (top cut off)
- 1 teaspoon Salt
- Black Pepper
- Olive Oil
- 1 teaspoon Paprika
- 1 teaspoon Italian Seasoning
- 200 grams Feta Cheese

Yields 3 portions of 350g of sauce. Each portion serves 2 people.

Notes:
- After about 1 hour the onions were starting to char. I turned it down to 100C.
- This was ultimately only okay. I think it would have been better without the butternut squash.
Steps
Make the sauce:
- Preheat the oven to 150°C fan.
- Put everything except the garlic into two large roasting trays. I used the largest pyrex (tomatoes + squash) and the cast iron casserole.
- Drizzle generously with olive oil (the butternut squash should get a brushing on the face side, then put it face down on the tray).
- Add the seasonings and mix to combine.
- Chop the head off the garlic head and nestle it into the tray.
- Roast for 90 minutes, stirring once halfway. We're aiming for: collapsing tomatoes, lightly caramelised edges.
- Turn the oven off, leave the door closed, and let everything cool inside for 30–60 minutes.
- Remove the vegetables and add to a blender with the feta cheese. Squeeze the garlic out. Blend until smooth.
- Taste and adjust for seasoning. At this point it's expected to be very thick!
- Portion out into 350g portions.
Using the sauce:
- Preheat the oven to 180°C.
- Put 200g dry pasta into a 9x13" ovenproof dish.
- Pour on the sauce, add 350ml of cold water, and stir into the pasta, coating well.
- Might need more like 400ml water.
- Bake uncovered for 25 minutes.
- Remove the dish from the oven and stir thoroughly.
- Sprinkle on 100g grated cheese and return to the oven for 20 minutes until bubbling and golden.
