Four Grain Muesli Granola

Ingredients
Wet Ingredients
- 120 grams Honey
- 70 grams Olive Oil
- 20 grams Coconut Oil
- 2 teaspoons Vanilla Extract
Dry Ingredients
- 400 grams Four-Grain Muesli Base
- 100 grams Almonds (roughly chopped)
- 80 grams Walnuts (or pecans; roughly chopped)
- 40 grams Pumpkin Seeds (or sunflower)
- 25 grams Ground Flaxseed
- 11⁄2 teaspoon Cinnamon
- 3⁄4 teaspoons Salt

Muesli = Jumbo Oats, Rolled Oats, Malted Wheat Flakes, Barley Flakes, Rye Flakes
1 serving = 50g
More olivey tasting but it grows on you! Nice and crunchy.
Steps
- Preheat oven to 150°C (conventional).
- Grease a 9×13" cast iron baking dish with coconut oil and set aside.
- In a small saucepan, heat the honey and oil until just melted. Then set aside to cool.
- In a large bowl, combine all dry ingredients and set aside.
- Once the liquids have cooled, add the vanilla extract and stir to combine.
- Pour wet mixture over dry. Mix slowly but thoroughly — every flake should look lightly glossy, not swimming.
- If it feels dry, add 1–2 tbsp extra honey, not oil (honey = glue).
- Transfer the mixture to the baking dish and using a metal spatula PRESS HARD. Get into all the corners, make multiple passes.
- Bake for 40 minutes, rotating after 20.
- Remove from the oven but leave the oven on. Let cool for 10 minutes.
- Using a metal spatula, break it up into large squares and transfer to a shallow baking sheet.
- Return baking sheet to oven for 15 minutes, until edges are deep golden.
- Remove and let cool fully (30–45 min).
