Chocolate Chip Skillet Cookie for Two

  1. Preheat your oven to 175°C conventional and generously butter a 6-1/4” mini cast iron skillet.
  2. In a medium bowl, combine the flour, baking soda and salt and mix well with a whisk until well combined; set aside.
  3. In a separate, larger mixing bowl, combine the granulated sugar, brown sugar and vanilla extract.
  4. To the sugars, add the melted butter and stir with a fork until well combined.
  5. Add the egg yolk, stir well
  6. Carefully stir in the flour mixture. Mix until completely combined.
  7. Fold in the chocolate chips.
  8. Transfer the cookie dough to the cast iron skillet and arrange it delicately with your fork, just so it's evenly distributed across the skillet.
  9. Bake for about 20 minutes, or until the edges are puffed and browned and the center appears set.
  10. Remove from the oven and press a few additional chocolate chips across the surface of the cookie, if desired; allow to cool for about 5 minutes before eating.
