Steps

  1. Into a large bowl, add the flour, wheat bran, sugar, baking powder, cinnamon, and salt. Mix to combine.
  2. Grate the butter into the bowl, and use your hands to incorporate and pinch into the flour mixture.
  3. Pour in the milk.
  4. Mix roughly in your bowl then tip out onto your surface and gently knead to bring it together. 
  5. Press into a flattish round about 1-2 inches thick then cut into 6 pieces and transfer to a plate.
  6. Apply an egg wash to the top.
  7. Place in the fridge for at least 15 minutes.
  8. Meanwhile, place a cast iron skillet in the oven while you preheat the oven to 220c fan.
  9. Once heated up, remove from fridge and transfer to the skillet.
  10. Bake for 8 minutes.
  11. Then, leaving them in the oven, reduce the temperature to 200c. If necessary, rotate the skillet at this point.
  12. Bake for a further 8 or 9 minutes, or until golden brown.
  13. Remove and place onto a cooling rack for a few minutes before eating.
