Bran Scones

Ingredients
- 200 grams Plain Flour
- 75 grams Wheat Bran
- 1 tablespoon Sugar
- 2 teaspoons Baking Powder
- 1⁄2 teaspoons Cinnamon (heaped)
- 1⁄2 teaspoons Salt (slightly under-do it)
- 40 grams Butter (frozen, grated)
- 200 millilitres Buttermilk (or plain milk or whey)
- 1 Egg (for wash)
Steps
- Into a large bowl, add the flour, wheat bran, sugar, baking powder, cinnamon, and salt. Mix to combine.
- Grate the butter into the bowl, and use your hands to incorporate and pinch into the flour mixture.
- Pour in the milk.
- Mix roughly in your bowl then tip out onto your surface and gently knead to bring it together.
- Press into a flattish round about 1-2 inches thick then cut into 6 pieces and transfer to a plate.
- Apply an egg wash to the top.
- Place in the fridge for at least 15 minutes.
- Meanwhile, place a cast iron skillet in the oven while you preheat the oven to 220c fan.
- Once heated up, remove from fridge and transfer to the skillet.
- Bake for 8 minutes.
- Then, leaving them in the oven, reduce the temperature to 200c. If necessary, rotate the skillet at this point.
- Bake for a further 8 or 9 minutes, or until golden brown.
- Remove and place onto a cooling rack for a few minutes before eating.
