Ingredients
Dough
- 355 grams Water (warm)
- 22.5 grams Dried Yeast (or 1 tbsp)
- 20 grams Sugar
- 39 millilitres Olive Oil
- 10 grams Salt
- 1 Egg
- 570 grams Bread Flour
Italian Herb Seasoning
- 11⁄2 teaspoon Dried Oregano
- 1 tablespoon Garlic Powder
- 11⁄2 teaspoon Parsley (dried)
- 1 tablespoon Parmesan Cheese
Notes
The "dredging in herbs" went horribly. Instead: mix all the herbs but keep the parm separate. Then just sprinkle the topping over the dough once they're on the baking sheet.
Next time experiment with part whole wheat flour.
Sugar has been reduced from last time (25g). As long as the bread still tastes good, reduce it by 5g each time.
Steps
- In a large bowl, whisk together the yeast and water.
- Then whisk in the sugar, oil, salt, and eggs.
- Add the flour and knead for 10-15 minutes.
- Rest the dough for 10 minutes, and meanwhile prepare a large baking sheet with semolina.
- Transfer dough onto a floured surface and cut into 4 equal pieces. Cut each piece in half again to make a total of 8 pieces. Gently pat and roll into a log shape.
- Spray the tops with water.
- Mix the herbs together, but keep the parmesan separate.
- Place on a large baking sheet and sprinkle each one with the herbs, and separately, the parmesan.
- Allow dough to rise until tripled in size (up to 1 hour if rising in a warm place.)
- Put in oven with light on.
- Wait 30 mins.
- If they look at least doubled, then remove them and preheat oven.
- ~45 mins total.
- Score the dough with 1-2 slashes.
- Preheat the oven to 190°C conventional.
- Optional: Sprinkle the tops with shredded Colby and Monterey Jack Cheese, or alternatives like cheddar/Red Leicester.
- Bake for 15-18 minutes on the middle rack.
- Allow to cool completely.
