This makes like 8-10 burritos. Last time I filled 6 then had extra filling.

Steps

Turkey Mince:

Do this in parallel with below potato step.

  1. Heat a cast iron skillet over medium high heat.
  2. Combine all the spices.
  3. Add olive oil to the skillet and add the mince. Smoosh it all down into one flat layer to get a nice browning. Sprinkle about 1/3 the spice mixture on top.
  4. Once thoroughly browned, flip it over. Sprinkle another 1/3 spice mixture on top. Reserve the remaining 1/3 spices for the vegetables later.
  5. Again once browned, break it up into small pieces and cook completely. Once cooked, remove and set aside.

Smashed Potatoes:

  1. Cut baby potatoes in half and place in a pot of water. Bring to a boil. 
  2. Once boiling, add salt. Boil for 5 minutes.
  3. Strain, rough them up, and let sit for 5 minutes.
  4. Add potatoes to the skillet and using a firm spatula, smash them as thinly as possible. Season with salt and pepper. Fry until golden, then flip. 
  5. Once cooked, remove and set aside. 

Fillings:

  1. Crack eggs, add salt, and whisk. Set aside.
  2. Add onion and red pepper to the skillet, along with the remaining spice mixture. Fry until softened.
  3. Once nearly done, push all the vegetables to one side of the pan. Add butter to the other side. Then pour the egg mixture onto the other side. Make scrambled eggs as normal.
  4. Once everything is done, turn off the heat, remove eggs and set them aside. Add the meat back to the pan with the veg and potatoes and mix thoroughly. Taste for seasoning.
  5. Allow everything to cool for a bit.

Assembly:

  1. Lay out a tortilla. Add a layer of guacamole. Add filling. Add cheese. Fold.
  2. If eating immediately, put seam side down on a skillet until browned. 
  3. If freezing, wrap in foil and freeze.
