Banana Baked Oatmeal

Ingredients
- 320 millilitres Milk
- 2 Egg
- 80 millilitres Maple Syrup
- 56 grams Butter (melted & slightly cooled)
- 230 grams Bananas (mashed; 2-3 bananas)
- 1 teaspoon Vanilla Extract
- 225 grams Oats
- 1 teaspoon Baking Powder
- 1 teaspoon Cinnamon
- 1⁄4 teaspoons Salt
- 90 grams Walnuts (optional)
Notes
For a 9x13" pan, 1.5x recipe and bake for 40-45 minutes.
Muffins: 30 minutes.
Steps
- Preheat oven to 177°C conventional and grease a 9x9" square pan with oil.
- Melt the butter and set aside to cool.
- In a large bowl, whisk together the milk, eggs, maple syrup, melted butter, mashed banana, and vanilla until combined.
- Add in the oats, baking powder, cinnamon, and salt, and whisk to combine.
- Fold in the chopped walnuts, if using.
- Pour into the prepared baking pan.
- Note: If using an 8x8 pan, don't use all the batter. Fill up 2 muffin cups first, then remainder in 8x8. Bake muffins as per note.
- Bake for 35 minutes or until the center appears *almost* set.
- Cool for 5 minutes before serving. Spoon or slice and serve with extra banana slices.
- Cover leftovers tightly and refrigerate for up to 1 week.
