Banana Baked Oatmeal

For a 9x13" pan, 1.5x recipe and bake for 40-45 minutes.

Muffins: 30 minutes.

Steps

  1. Preheat oven to 177°C conventional and grease a 9x9" square pan with oil.
  2. Melt the butter and set aside to cool.
  3. In a large bowl, whisk together the milk, eggs, maple syrup, melted butter, mashed banana, and vanilla until combined.
  4. Add in the oats, baking powder, cinnamon, and salt, and whisk to combine.
  5. Fold in the chopped walnuts, if using.
  6. Pour into the prepared baking pan.
    1. Note: If using an 8x8 pan, don't use all the batter. Fill up 2 muffin cups first, then remainder in 8x8. Bake muffins as per note.
  7. Bake for 35 minutes or until the center appears *almost* set.
  8. Cool for 5 minutes before serving. Spoon or slice and serve with extra banana slices.
  9. Cover leftovers tightly and refrigerate for up to 1 week.
