Sheet Pan Gnocchi and Roasted Vegetables

Steps

  1. Preheat the oven to 190C fan.
  2. Combine all ingredients (except the garlic) in a large bowl. Drizzle with olive oil and all the herbs/spices (except the chives).
  3. Cut the top off the garlic.
  4. Spread everything onto a single layer on the baking sheet and roast for 20 minutes.
  5. Remove, stir, then put back in for 5 minutes.
  6. Carefully squeeze the garlic cloves out of their skins into a large bowl. Mash them into 1 tablespoon olive oil.
  7. Spoon the gnocchi and vegetables into the bowl, gently stirring into the roasted garlic oil.
  8. Top with parmesan and chives and serve.
