Sheet Pan Gnocchi and Roasted Vegetables

Ingredients
Sheet Pan
- 200 grams Gnocchi (eyeball it)
- 1 Courgette (diced; 1/2 inch)
- 1 Onion (quartered)
- 1 head Garlic (top cut off)
- 1 Red Pepper
- Olive Oil
- Salt
- Black Pepper
- 1⁄2 teaspoons Paprika
- 1 teaspoon Dried Oregano
- 1⁄2 teaspoons Garlic Powder
Garnish
- Chives
- Parmesan Cheese
Steps
- Preheat the oven to 190C fan.
- Combine all ingredients (except the garlic) in a large bowl. Drizzle with olive oil and all the herbs/spices (except the chives).
- Cut the top off the garlic.
- Spread everything onto a single layer on the baking sheet and roast for 20 minutes.
- Remove, stir, then put back in for 5 minutes.
- Carefully squeeze the garlic cloves out of their skins into a large bowl. Mash them into 1 tablespoon olive oil.
- Spoon the gnocchi and vegetables into the bowl, gently stirring into the roasted garlic oil.
- Top with parmesan and chives and serve.
