Ingredients
Tiramisu
- 60 millilitres Double Cream
- 25 grams Sugar (2 tbsp)
- 1⁄2 teaspoons Vanilla Extract
- 56 grams Mascarpone (room temp)
- 90 millilitres Espresso (room temp)
- 22 millilitres Coffee Liqueur
- 8 Ladyfingers
- Cocoa Powder

Makes two small ramekins worth.
Steps
- Make the espresso and set aside to cool.
- Whip the cream, sugar, and vanilla until soft peaks form.
- Then add in the mascarpone and whip until smooth and stiff peaks form.
- Pour the coffee (and liqueur, if using) into a shallow bowl. Quickly and briefly (1-2 seconds) dip the ladyfingers and break them in half if needed to fit your dish.
- Place 4 dipped ladyfingers in a 10-ounce (300ml) ramekin to form the bottom layer.
- Spread half of the mascarpone mixture over the ladyfingers.
- Add a second layer of 4 dipped ladyfingers, then top with the remaining cream.
- Dust with cocoa powder and refrigerate for at least 2 hours before serving.
