Makes two small ramekins worth.

Steps

  1. Make the espresso and set aside to cool.
  2. Whip the cream, sugar, and vanilla until soft peaks form.
  3. Then add in the mascarpone and whip until smooth and stiff peaks form.
  4. Pour the coffee (and liqueur, if using) into a shallow bowl. Quickly and briefly (1-2 seconds) dip the ladyfingers and break them in half if needed to fit your dish.
  5. Place 4 dipped ladyfingers in a 10-ounce (300ml) ramekin to form the bottom layer.
  6. Spread half of the mascarpone mixture over the ladyfingers.
  7. Add a second layer of 4 dipped ladyfingers, then top with the remaining cream.
  8. Dust with cocoa powder and refrigerate for at least 2 hours before serving.
