Steps

Dough:

  1. Combine warm water, sugar, and yeast and let sit for 5 to 10 minutes. 
  2. Add in the olive oil, flour, and salt, and mix until a dough forms.
  3. Knead for 5 to 6 minutes until smooth, but firm. 
  4. Add olive oil to a large bowl and add the dough. Coat the dough in the oil, cover, and let rise for 1 hour until doubled.

Shape:

  1. Preheat the oven to 180°C fan.
  2. Remove the dough onto a lightly floured surface and split into 4 pieces.
  3. Shape each piece into a ball (this is when you'd freeze, if desired), then with a rolling pin roll it out into a flat circular shape.
  4. Assemble on a baking tray and let rest while you make the topping:

Topping & Cooking

  1. Melt the butter.
  2. Once melted, add in the garlic and parsley and mix to combine.
  3. Brush the top of the bread with the butter, garlic mixture.
  4. Sprinkle the cheese on top.
  5. Add salt and/or chilli flakes if desired.
  6. Bake at 180°C fan on the top rack for 12 or 13 minutes until golden.
