BBC Spaghetti Bolognese

Ingredients
Bolognese
- 1 tablespoon Olive Oil
- 500 grams Beef Mince (or half pork)
- 4 Bacon (optional)
- 2 Onion (diced)
- 2 Carrot (diced)
- 2 Celery (diced)
- 4 cloves Garlic
- 1 teaspoon Rosemary (like 1 tsp dried or 3 sprigs fresh)
- 125 millilitres Red Wine (make 200ml then measure)
- 2 tablespoons Tomato Puree
- 800 grams Plum Tomatoes
- 1 teaspoon Dried Oregano
- Sprinkle Dried Basil
- 2 Bay Leaf
- 1 Beef Stock (stock pot only; no water)
- 1 Chillies (red; optional; diced)
- 1 Parmesan Rind
Pasta
- 75 grams Parmesan Cheese
- 400 grams Fresh Pasta (gnocchi is yummy)
Notes
Start at 3pm.
You may oven cook the bacon to save time if desired.
Steps
- Put a large dutch oven on a medium heat and add 1 tbsp olive oil.
- Add the beef mince and cook until browned. Then remove from the pan and set aside.
- Add 4 finely chopped bacon rashers and fry for 10 mins until golden and crisp.
- Reduce the heat and add the onions. Cook for 3-5 minutes.
- Add the carrots and celery and fry for 10 mins. Stir the veg often until it softens.
- Add the garlic, rosemary, salt, and pepper, and cook for ~1 minute until aromatic.
- Add the red wine to deglaze. Cook for a few minutes.
- Add the tomato purée and fry for a couple minutes.
- Add the beef mince and bacon. Mix and allow to heat up for a few minutes.
- Add the chopped/plum tomatoes, the basil, dried oregano, bay leaves, beef stock pot (on its own; no water), 1 deseeded and finely chopped red chilli (if using). Stir with a wooden spoon, breaking up the plum tomatoes.
- If you have one, add in a Parmigiano Reggiano cheese rind.
- Bring to the boil, reduce to a gentle simmer and cover with a lid. Cook for 1 hr 15 mins stirring occasionally, until you have a rich, thick sauce.
- Remove the bay leaves and rind.
- Add the 75g grated parmesan, check the seasoning, and stir.
- When the bolognese is nearly finished, cook 400g pasta following the pack instructions.
- Drain the pasta, but reserve some water, and either stir into the bolognese sauce, or serve the sauce on top. Add in pasta water if it's looking dry or oily.
- Serve with more grated parmesan, the remaining basil leaves and crusty bread, if you like.
