Chicken Parmesan

Ingredients
- 1 Egg
- 1⁄4 cups Panko Breadcrumbs
- 1⁄4 cups Parmesan Cheese
- 1⁄4 teaspoons Salt
- 1⁄2 teaspoons Black Pepper
- 1⁄2 teaspoons Garlic Powder
- 300 grams Chicken Breasts (2 large)
- Marinara Sauce
- Mozzarella
Steps
- Preheat oven to 180°C fan. Prepare a baking sheet with oil, and place a wire rack on top. The wire rack allows for better crisping.
- In a shallow bowl, whisk the egg.
- In a separate shallow bowl, stir together the breadcrumbs, parmesan, and seasonings.
- Dip the chicken breasts in egg; allow excess to drip off. Dip in crumb mixture, patting to help coating adhere. Repeat with remaining chicken.
- Place chicken breasts in center third of baking pan. Spritz with cooking spray.
- Bake for 20 minutes.
- After 20 minutes, remove from the oven and spread marinara sauce over the chicken. Top with shredded cheese.
- Switch the oven mode to grill and move chicken rack to the top shelf.
- Return the chicken to the oven and bake for an additional 5 minutes, or until cheese is golden brown.
