  1. Preheat oven to 180°C fan. Prepare a baking sheet with oil, and place a wire rack on top. The wire rack allows for better crisping.
  2.  In a shallow bowl, whisk the egg.
  3. In a separate shallow bowl, stir together the breadcrumbs, parmesan, and seasonings.
  4. Dip the chicken breasts in egg; allow excess to drip off. Dip in crumb mixture, patting to help coating adhere. Repeat with remaining chicken.
  5. Place chicken breasts in center third of baking pan. Spritz with cooking spray.
  6. Bake for 20 minutes.
  7. After 20 minutes, remove from the oven and spread marinara sauce over the chicken. Top with shredded cheese.
  8. Switch the oven mode to grill and move chicken rack to the top shelf.
  9. Return the chicken to the oven and bake for an additional 5 minutes, or until cheese is golden brown.
