Steps

Sauce:

  1. Mix all the sauce ingredients and set aside.

Chicken:

  1. Dice the chicken and place it in a bowl.
  2. Generously sprinkle cornflour and black pepper on top and mix to incorporate.
  3. Heat a large cast iron pan (with high sides) with vegetable oil.
  4. Once hot, add the chicken and fry until done.
  5. Then set aside.

Vegetables & rice:

  1. Add the prepared vegetables to a pan and fry for a few minutes.
  2. Meanwhile, start cooking the rice.
  3. Add the sauce and cook until starting to bubble.
  4. Add the cornflour slurry (cornflour + water) and cook for another few minutes.
  5. Once it's at the desired thickness, add the chicken and mix.
  6. Optional: top with spring onions, cashews, and/or sesame seeds.

Serve with rice.
