Sweet & Sour Chicken

Ingredients
Sauce
- 80 millilitres Ketchup
- 80 millilitres White Wine Vinegar (or apple cidar vinegar)
- 60 millilitres Soy Sauce
- 50 grams Sugar
- 60 millilitres Orange Juice
Chicken
- 350 grams Chicken Breasts (diced)
- Cornflour
- Black Pepper
- Vegetable Oil
Vegetables
- 1 Onion (diced)
- 4 cloves Garlic (minced)
- 1 Red Pepper (large chunks)
- 1 Carrot (finely sliced)
- 1 tablespoon Cornflour
- 1 tablespoon Water (cold)
- Spring Onion (optional)
- Cashews (optional)
- Sesame Seeds (optional)
Rice
- 150 grams White Rice
Steps
Sauce:
- Mix all the sauce ingredients and set aside.
Chicken:
- Dice the chicken and place it in a bowl.
- Generously sprinkle cornflour and black pepper on top and mix to incorporate.
- Heat a large cast iron pan (with high sides) with vegetable oil.
- Once hot, add the chicken and fry until done.
- Then set aside.
Vegetables & rice:
- Add the prepared vegetables to a pan and fry for a few minutes.
- Meanwhile, start cooking the rice.
- Add the sauce and cook until starting to bubble.
- Add the cornflour slurry (cornflour + water) and cook for another few minutes.
- Once it's at the desired thickness, add the chicken and mix.
- Optional: top with spring onions, cashews, and/or sesame seeds.
Serve with rice.
