Pico de Gallo

Ingredients
- 1 Tomatoes (diced with juices squeezed out)
- 0.5 Onion (super finely diced)
- 0.5 Jalapeño (finely diced)
- Bunch Coriander (diced; like 1/3 pack)
- 1⁄2 teaspoons Salt
- 1 Lime (juice)
Steps
- Cut the tomatoes in half and gently squeeze out any liquid and scrape out the seeds.
- Dice the tomatoes and add them to a medium bowl.
- Dice the onion extra finely and add those to the bowl.
- Dice the jalapeño extra finely and add those to the bowl.
- Add the salt, cilantro and fresh squeezed juice of one lime.
- Mix well.
- Let rest covered on the counter for 30 minutes or up to one hour to allow the flavors to come together.
