Red Pesto Chicken

  1. Preheat the oven to 180 C.
  2. Add the chicken to an oven dish with some oil. 
  3. Season the chicken with the paprika, mixed Italian herbs, salt and pepper. 
  4. In a jug, make up the chicken stock and then add in the soft cheese (or cream) and stir until the cheese dissolves. Pour this into the oven dish.
  5. Add the pesto and garlic to the dish, putting some on the chicken itself and some into the sauce and giving it a stir. 
  6. Sprinkle the parmesan cheese on top.
  7. Pop this into the oven for 25-30 mins. Make sure tour chicken breast is cooked through and piping hot before serving.
