Red Pesto Chicken

Ingredients
- 2 Chicken Breasts
- 60 grams Soft Cheese (or single cream)
- 2 tablespoons Red Pesto
- 10 grams Parmesan Cheese
- 200 millilitres Chicken Stock
- 1⁄2 teaspoons Paprika
- 1⁄2 teaspoons Mixed Herbs
- 2 cloves Garlic
- Salt
- Black Pepper
Steps
- Preheat the oven to 180 C.
- Add the chicken to an oven dish with some oil.
- Season the chicken with the paprika, mixed Italian herbs, salt and pepper.
- In a jug, make up the chicken stock and then add in the soft cheese (or cream) and stir until the cheese dissolves. Pour this into the oven dish.
- Add the pesto and garlic to the dish, putting some on the chicken itself and some into the sauce and giving it a stir.
- Sprinkle the parmesan cheese on top.
- Pop this into the oven for 25-30 mins. Make sure tour chicken breast is cooked through and piping hot before serving.
