Steps

  1. Using a pestle and mortar, add the peeled garlic along with some rock salt. Crush.
  2. Then add the pine nuts, a little at a time. Rotate the pestle until you make a paste.
  3. Once the pine nuts are fully "pasted", add the basil leaves a few at a time until you once again make a creamy paste.
  4. Add the parmesan cheese and combine.
  5. Add a spoonful at a time of the olive oil and mix to combine.
