Pestle and Mortar Pesto

Ingredients
- 2 cloves Garlic
- Salt (rock)
- 40 grams Pine Nuts
- 30 grams Parmesan Cheese
- 38 millilitres Olive Oil
- 50 grams Fresh Basil Leaves (25g would also suffice)
Steps
- Using a pestle and mortar, add the peeled garlic along with some rock salt. Crush.
- Then add the pine nuts, a little at a time. Rotate the pestle until you make a paste.
- Once the pine nuts are fully "pasted", add the basil leaves a few at a time until you once again make a creamy paste.
- Add the parmesan cheese and combine.
- Add a spoonful at a time of the olive oil and mix to combine.
