Cheesy Beef Ragu

Ingredients
- Olive Oil
- 1 Onion (diced)
- 4 cloves Garlic
- 1 Red Pepper (diced)
- 500 grams Beef Mince
- 400 grams Chopped Tomatoes
- 1 Carrot
- 2 Red Wine Stock Pot
- 1 Beef Stock (cube; not dissolved)
- 2 tablespoons Worcestershire Sauce
- 2 tablespoons Tomato Puree
- handful Fresh Basil Leaves
- 40 grams Spinach
- 250 grams Gnocchi (fresh)
- 40 grams Cheddar Cheese (grated)
- Black Pepper
Steps
- Add olive oil to a large dutch oven and place over a medium heat.
- Add the onion, garlic, and red pepper, and cook for 10 minutes until soft.
- Add the minced beef and cook for 4-5 minutes until browned, breaking it up with a wooden spoon.
- Add the chopped tomatoes, carrot, red wine stock pots, beef stock cube (no need to dissolve it first), Worcestershire sauce, and tomato puree. Stir well.
- Cover with a tight-fitting lid and simmer for 30 minutes, stirring occasionally.
- Stir in the basil and spinach leaves until just wilted but still bright green, and then season with pepper.
- Stir in the gnocchi, sprinkle over the grated Cheddar, and simmer gently for a couple of minutes with the lid off.
