  1. Add olive oil to a large dutch oven and place over a medium heat.
  2. Add the onion, garlic, and red pepper, and cook for 10 minutes until soft.
  3. Add the minced beef and cook for 4-5 minutes until browned, breaking it up with a wooden spoon.
  4. Add the chopped tomatoes, carrot, red wine stock pots, beef stock cube (no need to dissolve it first), Worcestershire sauce, and tomato puree. Stir well.
  5. Cover with a tight-fitting lid and simmer for 30 minutes, stirring occasionally.
  6. Stir in the basil and spinach leaves until just wilted but still bright green, and then season with pepper.
  7. Stir in the gnocchi, sprinkle over the grated Cheddar, and simmer gently for a couple of minutes with the lid off.
